Hop Varieties

We chose to grow the following varieties due to their resistance to disease and their anticipated harvest timelines: Chinook, Alpharoma (Rakau), Triple Pearl, and Nugget. We sell fresh wet and dried hops. We do not pelletize.

Chinook

Harvested in August each season, Chinook is a dual purpose, high alpha variety that was released in 1985. It was developed by the USDA breeding program in Washington State.

Earthy, citrusy, spicy, piney. Awesome brew aroma, full flavor, & smooth bitterness.

Alpha Acids 11.5 - 15 %

Beta Acids 3 - 4 %

(2022 season tested at 12 & 3%)

Substitutes: Galena, Nugget, Columbus, and Northern Brewer.

Dried Whole Cone Hops

Fresh Wet Hops

  • Hand-picked and either picked up at our yard OR delivered to your brewery. These are undried hop flowers used to provide bitterness and hoppy aromatics to brews.

  • Fresh, wet, or raw hops (whatever you fancy to call them) are picked from the bine and used in the brewing process usually within a very quick timeframe. Wet hops are only available during harvest which spans between August and September in our region.

  • Brewing with fresh hops is done in a similar way to brewing with dried hops. They can be added at any point in the brewing process, from the start of the boil, whirlpool, to the dry hop.

  Dried Whole Cone Hops

  • Hand-picked and then dried utilizing no heat, we use this process in an effort to keep as many natural elements present as possible. We dry them to 8-10% before packaging.

  • These dried hop flowers provide bitterness and hoppy aromatics to brews as well. They can either be picked up at our yard OR can be delivered to your brewery. 

  • Brewing with dried hops can be added at any point in the brewing process, from the start of the boil, whirlpool, to the dry hop. Most brewers prefer to utilize steeping bags or a hop spider when working with whole cone hops.
